Shaved Brussels Sprouts
Servings: 8Ingredients:
- 1/4 cup olive oil
- 3 lbs Brussels sprouts, trimmed, sliced thin
- 1/4 lb shallots, peeled, minced
- 1 Tbsp fresh thyme, chopped
- 1/2 cup water
- 2 Tbsp fresh lemon juice (about 1 lemon)
Preparation:
Heat large nonstick saute pan on HIGH; add oil. Saute Brussels sprouts 6-7 min, stirring frequently.
Add shallots and thyme; continue to caramelize 2-3 min. Add water; stir and cook uncovered 1 min. Remove from heat. Add lemon juice; salt and pepper to taste. Chef Tip: Sugar may be added if bitter. Values per serving: Calories: 140, Total Fat: 7 g Fiber: 7g
