Quinoa with Pecans
Servings: 8Ingredients:
- 1 box Quinoa (12 oz), cooked per pkg directions (4 cups cooked)
- 1 Tbsp olive oil
- 1 cup pecans, chopped
- 1 cup chopped vegetables
- 2 Tbsp butter
- 2 Tbsp Oil
Preparation:
Heat olive oil on MEDIUM-LOW in large skillet; toast pecans, stirring frequently, 3-5 min, until slightly brown. Remove and set aside.
Add vegetables to pan; cook, stirring, 5 min. Add butter and basting oil to pan. Stir in Quinoa and pecans to heat through, 2-3 min. Serve. Values per serving: Calories: 350, Total Fat: 21 g Fiber: 5g
