Balsamic Green Bean Salad
Servings: 4Ingredients:
- 1 lb fresh green beans, ends trimmed, cut in thirds
- 1/4 small red onion, peeled, thinly sliced (about 1/2 cup)
- 6 Tbsp Oil
- 1 Tbsp grated lemon zest (about 1/2 lemon)
- 1 Tbsp fresh lemon juice
- 1 Tbsp balsamic vinegar
- 2 Tbsp roasted sesame seeds
Preparation:
Heat pan of salted water to boiling on HIGH heat. Add beans; blanch until crisp-tender, 2-3 min. Drain and shock by placing in ice water (to stop cooking process); drain well.
Combine beans with red onion in medium-size bowl. Whisk together basting oil, zest, juice, and vinegar in small bowl. Pour over vegetables; salt and pepper to taste. Toss; garnish with sesame seed. Values per serving: Calories: 160, Total Fat: 11 g Fiber: 5 g
